How to Dehydrate Apricots
- Rinse your fruits and pat dry.
- Cut apricots open, discard the pit. Decide if you want to cut your fruits into halves or quarters or chips.
- Spread cut fruits on a dehydrator tray.
- Set temperature somewhere between 135 – 145 Fahrenheit/ 57- 62 Celsius and dry for about 14-18 hours or until you have the desired consistency.
- Turn the fruit pieces in between, so that they dry on all sides.
- Dry apricot slices until perfect.
You can tell the apricots are dehydrated when they are no longer juicy to the touch. They should be pliable and when cut should not ooze juice.
- Once the apricots are dehydrated leave them in an open container to fully cool. Make sure they are completely cool before storing them in an airtight container. If you store dehydrated apricots to early, the moisture can condense and form mold.
How to Store Dried Apricots
Store your dehydrated apricot pieces in an airtight container or in a vacuum bag.
You don’t need to refrigerate or freeze them (except if you live in a wet tropical climate).
But keep away from direct sunlight, humidity and heat.
If prepared and stored the right way, they will be good for about 6-12 months. If they last that long.

Recipe with Dehydrated Apricots
- Trail Mix: Snack on dried apricot slices as is, or add to trail mixes with nuts and other fruits.
- Fruit Cocktail: Rehydrate dried apricots, or a combination of apricots and other fruits with cold water. For a single large serving, combine one cup of dried fruit with one cup of cold water. Wait about an hour for the fruit to plump up nicely. If you double the water, you will have some fruity tasting juice to enjoy also. A thermos food jar is ideal for rehydrating dried fruit.
- Trail Breakfasts: Add dehydrated apricots to oatmeal or granola cereal with milk. Tip: Rehydrate the apricots briefly before adding them to your breakfast.
- Dinners: Include a pinch of dried apricot slices with mixed vegetables added to meals, such as meals with curry sauce.

Tips
Use Fruit Fresh Produce Protector
If you won’t be consuming your dehydrated apricots within 2-3 months you may want to consider pre-treating your fruit prior to dehydrating to prevent browning. This can be done using lemon juice (1 cup lemon juice to 1-quart water) or by using Fruit Fresh Produce Protector. Dip your fruit in the pre-treater and then dehydrate as normal.
Use airtight Jars
Apricots turn brown very quickly under normal conditions, so it is preferable to put them in an air-tight jar
Personally, I use a moisture absorber, it helps a lot.
Flavor Variations
Here are some flavor ideas, sprinkle the following over your apricot slices before you dry them:
- sugar – try brown sugar or homemade vanilla sugar, Fine powder is preferred
- red chili pepper ground – i.e cayenne
- ground green cardamom
